Bacon and Spinach Egg-Bites
These delicious breakfast egg muffins with bacon and spinach are easily made in a regular muffin pan. Great recipe for when you need to make breakfast for a lot of people or make breakfast in advance.
cheddar cheese shredded
spinach cooked and drained
about 8 oz fresh spinach
bacon slices cooked
drained of fat, and chopped
Parmesan cheese shredded

with olive oil.
Put 1.5 cups of water into the inner pot.
In a large bowl, beat eggs until smooth. Add milk, salt, Cheddar cheese and mix. Stir spinach, cooked bacon into the egg mixture.
Ladle the egg mixture into the Silikong molds ¾ full.
Top each cup with shredded Parmesan cheese and close it with silicone lid/foil.
Place the Silikong molds inside the pot.
Place the lid on the Instant Pot and seal. Set the Instant Pot to the Steam setting. Cook for 12 minutes.
Allow the steam to naturally release for 10 minutes, instead of immediate quick release
Press the release button, open the pot, and remove the Silikong molds.
Allow the egg bites to cool for a few minutes before enjoying :-)
