Monterey Jack Cheese and Baby Spinach Egg-Bites

  • 6 egg whites
  • 1/4 cup cottage cheese
  • 1/4 cup Monterey Jack cheese
  • Sprinkle of cayenne salt, and black pepper
  • 2 Tbsps chopped roasted red peppers
  • 2 Tbsps of chopped baby spinach


  • Spray your Silikong Egg-Bite Mold with olive oil.
  • Put 1.5 cups of water into the inner pot.
  • Put one cup of water in your @instantpotofficial , put in the wire trivet, and place the pan on top. Set to Steam for 8 minutes. Let it natural pressure release for 5 minutes.
  • Blend all ingredients besides the red peppers and spinach for 60 seconds in a food processor or blender.
  • Add the chopped roasted red peppers and the chopped baby spinach. Pulse 2 or 3 times.
  • Ladle the mixture into the Silikong mold ¾ full and cover it with the Silikong lid or with a foil.
  • Place the Silikong mold inside the pot.
  • Place the lid on the Instant Pot and seal. Set the Instant Pot to the Steam setting. Cook for 8 minutes.
  • Allow the steam to naturally release for 5 minutes.
  • Press the release button, open the pot, and remove the Silikong mold.
  • Allow the egg bites to cool for a few minutes before enjoying.
