Pumpkin Peanut Butter Soup

  • 2 Tbsp olive oil
  • Onion large 150g
  • 2 Cloves garlic
  • 750 g Pumpkin or Butternut Squash
  • 1 L Stock chicken or vegetable
  • 1/2 Cup Peanut butter 135g
  • 1 tsp Marmite (Vegemite or Soy Sauce)

  3. Skin, deseed and cube the pumpkin
  4. Heat oil in a large saucepan
  5. Dice the onion, and sauté until soft and fragrant
  6. Add garlic and sauté for 1-2 mins
  7. Add the stock
  8. Simmer for 20mins until pumpkin is tender
  9. Blitz with a stick blender
  10. Remove 1 cup of the soup, and put in a smaller bowl/pot, add the peanut butter, marmite or soy sauce, blitz until well combined
  11. Return to the peanut butter mix to the large pot and stir well
  12. Season to taste
  13. Serve
