This was the first time we tried red lentil pasta. I wanted to make a pasta sauce that will compliment it so roasted red bell pepper and fresh garlic with olive oil at 400F for 30 mins then blended it in food processor and added Parmesan cheese. I’m thinking to add a little bit of coconut milk next time.
Marinated zucchinis in olive oil, dried thyme, rosemary, pepper, and roasted at 400F for 30 mins. He pushed them around with his index finger and did not even eat one small piece! I’ve been trying to give him shellfish as often as I could. This was the 2nd time I gave him scallops which was sautéed in ghee he only had half of one.
