Black bean pasta salad with beet sauce, salmon patty, and orange jello. I tried so hard to make the black bean pasta edible but couldn’t succeed! He tried one pasta and that was it! And to be honest I also didn’t like the taste 🙁
He worked his way around the pasta to pick some of orange bell peppers and most of the pomegranate seeds. I then offered him the beet sauce and that he liked 🙂
I basically mixed whole bunch of things for the sauce in hope of changing the pasta taste – 1 avocado
– 1 cooked beet – 1 tbsp red wine vinegar – 2 tbsp olive oil – 2 tbsp yogurt – cilantro bunch – 1/2 tbsp honey – 1/2 tbsp coriander – Salt/pepper/garlic powder The 2nd failed attempt was offering salmon 🙁 i baked the patties in toaster oven at 350F for 30 mins. so maybe he just doesn’t like Salmon. – 1 cup cooked salmon – 3 tbsp chopped parsley – 2 tbsp chopped greed onion – 1/2 cup almond flour – 1 egg – 1/2 cup shredded cheddar cheese – Zest of one orange – Salt/pepper/garlic powder
This was his first time trying jello. I think he was more amazed by the texture rather than the taste! He ate one of the pumpkins and crushed the other one.
The jello is a sugar free naturally sweetened one called Natural Simply Delish I got it from Whole Foods.
