Chicken Quinoa, King Mushroom and Strawberries Yogurt

My baby wasn’t into group beef from the beginning so I had to try mixing it with other ingredients. This recipe is one that he likes. The King oyster mushroom we got from the farmers’ market this week.

We really like the taste because it has a meaty flavor but it has a bit firm texture so I steamed it first until it got softer then sliced it and sautéed it in ghee and a bit of salt and garlic powder( no salt for babies younger than 1-year-old).

Yogurt mixed with strawberries is one of his favorites so I always use it when I want to introduce something new.

Here is the recipe for group beef+quinoa (the measurement is to feed the entire family and not just the baby 😊)

>1 lb grass-fed group beef
>1 onion finely sliced >1 bell pepper sliced in small pieces >2 tbsp tomato paste
>1 tsp turmeric powder >1 tsp garlic powder >salt & pepper
>1 tbsp ghee
>1 cup quinoa
>2 cups chicken/beef broth low sodium

Cook the quinoa in chicken broth or beef broth separately and put it aside. Sauté onion in ghee then add the spices. Let it sauté for 1 min then add the bell pepper and sauté for another minute. Next, add the group beef and stir everything. Then add the tomato paste and a little bit of water close the lid and let it simmer until the liquid is absorbed. Once ready mix it with the cooked quinoa and serve.
