Beet 3ways: beet pasta tossed with butter and Parmesan cheese, beet+strawberry+almond butter yogurt topped with chia seeds, beet stripes with goat cheese crumbles.
I like to roast beets, wash the skin throughly, rub generous amount of olive oil to the skin, and then wrap it in aluminum foil. Roast for 50 mins at 400F.
I used one small beet between the yogurt and goat cheese mixture.
Pasta was the familiar food for him, loved the yogurt, did not touch beet/goat cheese
