Baby Pancakes – Apple and Oat

  • 1.5 cups rolled oats (150g)
  • 1/2 cup apple purée (150g)
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 Cup milk (or milk substitute)
  • 1 Tbsp maple syrup
  1. Place oats into a food processor and blitz until fine
  2. Add remaining ingredients and blend until smooth, the mixture will be thick
  3. Drop spoonfuls onto a medium heat greased pan
  4. Flip the pancakes when bubbles form and burst on the surface
  5. Allow to cool then serve!

The maple syrup is optional This recipe will work with any milk or alternative, (soy milk, rice milk, almond milk, coconut milk) This recipe is wheat free but not gluten free if traditional oats are used
